Halwas are easy and delicious Indian Desserts. They can be made with all kinds of ingredients (even ones normally associated with savory foods) ranging from lentils and veggies to fruits and grains.
This recipe for sooji ka halwa ("made with semolina") is a popular version with many families because it is one of those simple but very satisfying desserts that hits the sweet spot every time.
The trick to getting sooji ka halwa right is in the correct proportion of ingredients, so follow this recipe exactly to get the best results.
INGREDIENTS
1 CUP COARSE SOOJI
1 CUP SUGAR
1 CUP MILK
2 CUPS WATER
1 CUP DESI GHEE
3-4 CARDAMOM POWDER
½ CUP CHOPPED DRY FRUITS (ALMONDS, RAISINS, CASHEW)
INSTRUCTIONS
Add sugar, milk, and water in a pan and bring it to a boil.
Keep stirring until sugar is fully dissolved in water. After that switch off the flame and set it aside.
In another pan, dry roast sooji on a low flame for 5 minutes, keep stirring
Now add ghee, continue stirring for another 5 minutes
Keep the flame low all the time
Add cardamom and ¾ cup nuts and give a stir
· When the sooji is light brown and gets a glossy look and does not stick together much, add sugar mixture slowly
It will become liquidy. Keep stirring.
Remove halwa from flame once it is of a dropping consistency.
Let it cool down.
Garnish with rest of the nuts and serve it.
QUICK TIPS
Simple Ratio – 1:1:1:3; 1 CUP SUGAR: 1 CUP SOOJI: 1 CUP GHEE: 3 CUPS LIQUID (2 CUPS WATER + 1 CUP MILK)
If you are using fine sooji, then use just ½ cup ghee
Never stop stirring in the whole process of cooking halwa
Adding milk makes halwa soft and smooth
