And we call it Paddu.

Kuzhi paniyaram (Tamil) or Paddu (kannada)or Gunta Ponganalu (Telugu) or is an Indian dish made by steaming batter using a mould. The batter is made of lentil and rice and is similar in composition to the batter used to make idli or dosa. The dish can also be made sweet or spicy. Paniyaram is made on a special pan that comes with multiple small fissures. It is known by various names in South India including paddu, appe, guliappa, gulittu, gundponglu, ponganalu.

Serves: 2 INGREDIENTS

  • few coriander leaves, finely chopped

  • 1 inch ginger, finely chopped or grated

  • few curry leaves, finely chopped

  • ½ tbsp kasuri methi

  • 1 onion, finely chopped

  • salt to taste

  • oil for greasing pan

INSTRUCTIONS

  • Take required batter in a different bowl.

  • Add chopped green chillies, ginger, coriander and curry leaves

  • add in salt and mix the batter well.

  • now slowly pour the batter into each of the moulds of paddu maker with the help of large spoon.

  • reduce the heat to medium and cook for 3 min with a closed lid.

  • once the batter gets cooked from bottom, slowly with the help of spoon flip it over and cook other side.

  • Ready to eat, serve with coconut chutney or tomato chutney.

QUICK TIPS -

  • Don't pour the batter in to moulds till top, it should be ¼ empty, else it will come out.

  • For Kids - You can add cheese and avoid green chilli. Fill ¼ mould, add cheese and then again fill ¼th

  • You can add more vegetables like capsicum, broccoli, mushrooms,
