Pav Bhaji

Mumma: Pihu what shall we cook today?

Pihu: Potato

Mumma: Do you really like anything else except potato, you potato master?

Pihu: how about adding in some peas, tomatoes in that

Mumma: how about adding some bottleguard?

Pihu: naaaaa

Mumma: cauliflower?

Pihu: okies

Mumma: Brinjal?

Pihu: naaaaa

Mumma: as you say, let me cook that


And smart Mumma cooked what Pihu asked for and added what all she wants to eat too and called it Pav bhaji ;-)

Pav bhaji is a fast food dish from Maharashtra, India, consisting of a thick vegetable curry and served with a soft bread roll called pav.

Type of dish: Merienda (light meal)

Place of origin: West India

Main ingredients: Pav, Potatoes, Tomatoes, Mixed vegetables

INGREDIENTS

  • 5 tbsp Butter

  • 4 cups chopped Tomatoes

  • 2 cups Potatoes

  • 1 cup Brinjal

  • 1 cup Bottle guard

  • 1 cup Cauliflower

  • ½ cup boiled peas

  • ½ tbsp pao bhaji masala

  • Salt to taste

  • ½ tbsp turmeric powder

  • ½ tbsp chilli powder

  • 2 green chillies (change as per taste)

  • ½ tbsp jeera (cumin seeds)

  • 1 tbsp lemon juice

INSTRUCTIONS

  • Boil all the vegetables; peeled potatos, brinjal, bottle guard, green chillies and cauliflower in cooker for 2 whistles.

  • In a pan add 4 tbsp butter and jeera. Let them crackle.

  • Add tomatoes and salt.

  • Fry on low flame till they turn soft/cooked enough.

  • Add mashed boiled veggies, boiled peas and the stock too.

  • Again mash as much as you can.

  • Add all the spices; pav bhaji masala, red chilli powder, turmeric powder

  • Add lemon juice

  • keep on stirring till then you get a consistency you are looking for.

  • fry the pav with butter and serve with bhaji, onion, lemon.

  • yummy food is ready to eat.

QUICK TIPS

  • You can use oil instead of butter if you are looking for non-fatty food.

  • If you don't have pav bhaji masala, you can use garam masala and mango powder (amchoor) as an alternative for that.
