Peanut Chutney

INGREDIENTS

  • 1 cup peanuts

  • ¼ cup grated coconut

  • 3 red chillies

  • 2 small garlic pods

  • ½ tbsp oil

  • Salt to taste

For seasoning:-

  • 1 tbsp oil

  • ¼ tbsp mustard seeds

  • ¼ tbsp split urad dal

  • 1 sprig curry leaves

INSTRUCTIONS

  • Heat a pan. Dry roast peanuts on hot pan until they turn brown. Remove the nuts from heat and allow them to cool.

  • Remove the skin from the peanuts. This is very important step, chutney will taste bitter and bad if skin is left on.

  • In the same pan, add oil and roast red chillies and garlic for 1-2 mins.

  • In a mixer, blend together peanuts, coconut, red chillies, garlic and salt and little water into a smooth paste. Do not make chutney very runny, add  water little by little while grinding.

  • Heat oil mentioned  in seasoning and add the seasoning items

  • Remove from pan and mix it with the chutney.

  • Serve it with your fav food, mine is idli :)
