INGREDIENTS
1 cup peanuts
¼ cup grated coconut
3 red chillies
2 small garlic pods
½ tbsp oil
Salt to taste
For seasoning:-
1 tbsp oil
¼ tbsp mustard seeds
¼ tbsp split urad dal
1 sprig curry leaves
INSTRUCTIONS
Heat a pan. Dry roast peanuts on hot pan until they turn brown. Remove the nuts from heat and allow them to cool.
Remove the skin from the peanuts. This is very important step, chutney will taste bitter and bad if skin is left on.
In the same pan, add oil and roast red chillies and garlic for 1-2 mins.
In a mixer, blend together peanuts, coconut, red chillies, garlic and salt and little water into a smooth paste. Do not make chutney very runny, add water little by little while grinding.
Heat oil mentioned in seasoning and add the seasoning items
Remove from pan and mix it with the chutney.
Serve it with your fav food, mine is idli :)
